Green Beans with Shallots

Perfect fresh green beans are the key to this recipe’s success. They are perfectly cooked when still slightly crisp; it takes only about five minutes.

2 pounds green beans, wash and remove ends
2 to 3 tablespoons vegetable oil
3 tablespoons finely chopped shallots
1/4 cup water
1/2 to 1 teaspoon Spike Vegetable Seasoning

After preparing the beans, put them into the refrigerator n a plastic bag to stay crisp until cooking time. If you are cooking them immediately, drop into a bowl of ice water as you cut hem. Then drain in a colander.

In a heavy sautee pan, heat oil, add shallots and sautee until lightly browned. Add green beans and stir until pan is hot once again. Add 1/4 cup water and immediately cover the pan. Leave heat on high for about 2 minutes, and then turn off.

Let beans sit, covered for 1 to 2 minutes to steam. Uncover and add Spike Seasoning just before serving.
